Preparation

In a saucepan over medium heat, soften the onion, jalapeno, garlic and spices in the oil. Season with salt and pepper. Add the broth, beans, cauliflower and potato. Bring to a boil, reduce the heat, cover and simmer until the vegetables are tender, about 15 minutes. Add the sour cream. Adjust the seasoning.

Serve in bowls. Garnish with cheese and crushed corn chips.

Amazing!!! Every time I've made this, people have devoured their portion and come back for seconds. We are not vegetarians but love this meal...and no complaints from the big carnivorous men either (tried and tested at a Superbowl party). The best part is it's also gluten-free if you make sure the chicken stock doesn't contain gluten. Also, for potlucks, I've turn this into a dip with corn chips - just prepare the chili ahead of time and when ready to serve, spread the cheese on the surface and stick in the oven long enough for the cheese to melt.
