  1. In a saucepan, soften the onion, garlic and carrot in the butter.
  2. Add the curry powder and cook for 1 minute.
  3. Add the ginger, broth, coconut milk and tomato paste.
  4. Bring to a boil and add the lentils. Reduce the heat, cover and simmer for 20 minutes. Adjust the seasoning.
  5. Serve with pan-fried flatbread.

    Very easy and quick preparation with items already in the pantry or easy to obtain. This soup is rich and satisfying and the flavours meld and change if you need to keep it in the fridge for a few days. it just gets better!
