Ingredients
  • 225 g (1/2 lb) confit duck gizzards
  • 30 ml (2 tablespoons) duck fat
  • Grated zest of 1 lemon 

  • 15 ml (1 tablespoon) lemon juice 

  • 15 ml (1 tablespoon) chopped fresh chives
  • 5 ml (1 teaspoon) chopped fresh thyme 

  • Espelette pepper, to taste
  • Salt and pepper 






Preparation
1.
In a small saucepan, gently warm the gizzards in the duck fat. Add the remaining ingredients and cook for 1 minute. Season with salt and pepper. Serve warm as hors-d’oeuvres or appetizers.

Tips

It is essential to find perfectly soft and tender confit gizzards. They are sold, preserved, in butcher shops and in some grocery stores.
