Preparation

With a sharp knife, remove most of the fat from the duck breasts, leaving only a thin layer. Make crisscross incision on the remaining fat of each duck breast, without cutting into the meat.

In a glass dish, combine the vinegar, oil, garlic, sugar, and salt. Add the meat and coat well. Cover and refrigerate for 12 to 24 hours.

Preheat the grill, setting the burners on high on one side only. Oil the grate.

Place the duck, fat side down, on the off section of the grill. Cook for about 15 minutes. Grill the breasts on the lit section for 3 to 4 minutes per side or until the desired doneness. Season with pepper.
