Red Bell Pepper Pesto 


Preparation time: 15 min
Cooking time: 20 min
Output: 375 ml (1 1/2 cups)

Ingredients
  • The flesh of 2 roasted red bell peppers
  • 125 ml (1/2 cup) grated Parmigiano-Reggiano cheese 

  • 1 clove garlic, finely chopped 

  • 30 ml (2 tablespoons) pine nuts
  • 60 ml (1/4 cup) olive oil 

  • 10 ml (2 teaspoons) harissa sauce
  • 5 ml (1 teaspoon) lemon juice 

  • Salt and pepper 






Preparation
1.
In a food processor, puree all the ingredients until creamy but still slightly grainy. Season with salt and pepper.
2.
Keep refrigerated in an airtight container. 



Tips

Use this pesto as a sauce for grilled meats or to garnish soups, pastas and sandwiches.
