Ingredients
    Salmon
  • 1 skinless salmon fillet, about 1.2 kg (2.5 lbs) 

  • Olive oil, for brushing 

  • 4 sprigs parsley 

  • 4 stalks fennel bulb 

  • Salt and pepper



Preparation
1.
Place a rack in the lowest position of the oven. Place a second rack in the middle position of the oven. Preheat the oven to 110 °C (225 °F). Line a baking sheet with parchment paper.
2.
Place the salmon fillet on the baking sheet and generously brush with oil. Season with salt and pepper. Cover with the herbs and fennel. Set aside.
3.
Place a baking dish filled with boiling water on the lowest rack of the oven for 5 minutes to create steam.
4.
Place the salmon on the rack above the baking dish. Bake for 25 to 35 minutes, depending on its thickness or until the salmon is medium rare in the center.
5.
Serve the salmon hot or cold with vegetables. 



Tips

The water-filled dish under the salmon creates steam that keeps the salmon flesh very moist.
