Chicken Caesar Wraps

Ingredients
    Caesar mayonnaise
  • 125 ml (1/2 cup) mayonnaise 

  • 125 ml (1/2 cup) grated Parmigiano-Reggiano cheese 

  • 30 ml (2 tablespoons) lemon juice 

  • 10 ml (2 teaspoons) capers, drained and finely chopped
  • 5 ml (1 teaspoon) mashed anchovies
  • or
  • 1 anchovy fillet, chopped
  • Salt and pepper
  • Wraps
  • 4 large tortillas, about 23-cm (9-inch) in diameter
  • 8 leaves romaine lettuce
  • 8 slices bacon, cooked until crisp 

  • 2 skinless and boneless chicken breast halves, cooked and thinly sliced
  • 1 to 2 tomatoes, thinly sliced



Preparation
Caesar mayonnaise

In a bowl, combine all the ingredients. Set aside. 

Wraps

On a work surface, lay the tortillas. Spread with the Caesar mayonnaise. Cover with the lettuce, bacon, chicken, and tomato. Season with salt and pepper. Roll tightly and wrap individually in parchment paper. Close as a papillote. Cut in half.
