Cream of Sweet Potato, Ginger and Rum Soup


  • 1 bulb garlic
  • 3 large sweet potatoes, peeled and cubed
  • 1 Spanish onion, chopped
  • 2 tablespoons (30 ml) butter
  • 4 cups (1 litre) chicken broth
  • 2 tablespoons (30 ml) chopped fresh ginger
  • 2 tablespoons (30 ml) dark rum (optional)
  • 1/2 cup (125 ml) 35% cream
  • 1 pinch Cayenne pepper
  • Salt


  1. Preheat the oven to 180 °C (350 °F).
  2. Cut off the top of the garlic bulb. Wrap the bulb in aluminum foil. Bake for 45 minutes. Let cool. Squeeze the bulb of garlic to extract the roasted flesh. Set aside.
  3. In a large saucepan, cook the sweet potatoes and onion in the butter. Add the broth. Bring to a boil, cover and simmer for 10 minutes. Add the ginger and garlic flesh. Cook until the sweet potatoes are tender.
  4. In a blender, purée the soup until smooth.
  5. Return to the saucepan. Add the rum and cream. Simmer for 2 to 3 minutes. Season with Cayenne pepper and salt.
