Plum, Apple and Flaxseed Crisp
Ingredients
Topping
- 1/4 cup (60 ml) whole flaxseed
- 1/2 cup (125 ml) brown sugar
- 1/2 cup (125 ml) unsalted butter, softened
- 1/2 cup (125 ml) flour
- 1 cup (250 ml) quick-cooking rolled oats
- 1/4 teaspoon (1 ml) ground cinnamon
- 1/4 teaspoon (1 ml) ground nutmeg
Filling
- 1/2 cup (125 ml) brown sugar
- 1 tablespoon (15 ml) cornstarch
- 3 cups (750 ml) pitted and diced plums
- 3 cups (750 ml) peeled and cubed Cortland apples
Preparation
- With a rack in the middle position, preheat the oven to 190 °C (375 °F).
Topping
- In a coffee grinder or a mill, grind the flaxseeds.
- In a bowl, combine the flaxseeds and the remaining ingredients. Set aside.
Filling
- In a bowl, combine the brown sugar and cornstarch.
- In a 30 x 20-cm pan, combine the fruit and brown sugar mixture. Cover with the topping. Bake for about 40 minutes. Let cool.
- Serve with plain yogurt or vanilla ice cream.
