Plum, Apple and Flaxseed Crisp 


Ingredients

    Topping

  • 1/4 cup (60 ml) whole flaxseed
  • 1/2 cup (125 ml) brown sugar
  • 1/2 cup (125 ml) unsalted butter, softened
  • 1/2 cup (125 ml) flour
  • 1 cup (250 ml) quick-cooking rolled oats
  • 1/4 teaspoon (1 ml) ground cinnamon
  • 1/4 teaspoon (1 ml) ground nutmeg

    Filling

  • 1/2 cup (125 ml) brown sugar
  • 1 tablespoon (15 ml) cornstarch
  • 3 cups (750 ml) pitted and diced plums
  • 3 cups (750 ml) peeled and cubed Cortland apples

Preparation

  1. With a rack in the middle position, preheat the oven to 190 °C (375 °F). 


Topping

  1. In a coffee grinder or a mill, grind the flaxseeds.
  2. In a bowl, combine the flaxseeds and the remaining ingredients. Set aside. 


Filling

  1. In a bowl, combine the brown sugar and cornstarch.
  2. In a 30 x 20-cm pan, combine the fruit and brown sugar mixture. Cover with the topping. Bake for about 40 minutes. Let cool.
  3. Serve with plain yogurt or vanilla ice cream.
