Skate is an ideal fish for people who do not particularly like fish. It does not have a very pronounced “fishy” taste but instead has a lovely, delicate flavour. Its texture more closely resembles chicken than fish. It has no bones, another plus for fussy fish-eaters. When buying, be sure to choose a fresh skate, one that does not emit a strong odour of ammonia. A 650 g wing will serve two people. Before cooking, it is important to rinse it for at least one minute under cold running water to remove the smell of ammonia. If the smell persists even after a second rinse, this means that the skate wing is not fresh. After cooking, if the flesh remains white and viscous, it is undercooked. Skate serves up beautifully, making it the perfect menu choice for a dinner party. It is not easily found, so you may need to order it from your fishmonger.
