If you’re serving the soup cold, you’ll need to add some broth to adjust the consistency of the soup and adjust the seasoning.

You can whip the cream instead of adding it to the soup. In this case, add a dollop of whipped cream to each serving of soup and serve immediately.

When served hot, the soup is called potage parmentier and when it’s served cold it’s called vichyssoise.
