Gorgonzola and Honey Dressing
- 2 oz (55 g) Gorgonzola cheese, rind removed
- 3 tablespoons (45 ml) white balsamic vinegar
- 1 tablespoon (15 ml) honey
- 1/4 cup (60 ml) olive oil
- 2 tablespoons (30 ml) finely chopped chives
- Salt and pepper
- In a bowl, combine the cheese with the vinegar and honey using a whisk. Add the oil and whisk until smooth. Add the chives. Season with salt and pepper.
