  1. In a bowl, combine all the ingredients. Set aside.

  1. In a large shallow serving platter, scatter the lettuce, peppers, bocconcini, artichokes, eggplant and sausage. Drizzle with the vinaigrette. Garnish with the cheese shavings. Sprinkle with salt and pepper.
