Note from Ricardo

Mexican Fried Ice Cream

Fried ice cream is intriguing. Outside, each ball is hot and crispy. When cut, the ice cream is still cold and firm in the center. A delight! I urge you to prepare the ice cream balls in advance since they require several hours of freezing. I keep the non-fried balls several weeks in an airtight container in the freezer. When friends come for dinner, I just take my fryer outside (to avoid the smell) for frying. It's fast and it impresses everyone.
