1 untreated maple plank, about 15 x 6 inches (38 x 15 cm), for grilling
3/4 lb (340 g) large raw shrimp (16-20), peeled with tail intact
2 tbsp (30 ml) olive oil
1/2 tsp Cajun seasoning
Chopped fresh chives, to taste
Grilled lime wedges, to taste
Soak the plank in water for 1 to 4 hours, making sure it is completely submerged.
In a bowl, combine the shrimp, oil and spices.
Preheat the grill, setting the burners to medium. Place the plank on the grill and heat for 10 minutes or until the wood is well marked. Flip the plank over and place the shrimp on it. Close the lid and cook for 8 to 10 minutes or until cooked through. Sprinkle with chives and serve with grilled lime wedges. Serve as an hors d’oeuvres.
