Ingredients: 1 egg yolk; 1 tablespoon (15 ml) lemon juice; 1 teaspoon (5 ml) Dijon mustard; 1/2 cup (125 ml) canola oil; Salt and pepper; 1 lb (454 g) snow crab meat, drained (preferably fresh); 3/4 cup (180 ml) English cucumber peeled, seeded and diced; 2 green onions, finely chopped; Tabasco sauce, to taste; 6 hot dog buns; 6 Boston lettuce leaves; Softened butter, for spreading

1 egg yolk  
1 tablespoon (15 ml) lemon juice

Rolls

1 lb (454 g) snow crab meat, drained (preferably fresh)
3/4 cup (180 ml) English cucumber peeled, seeded and diced
2 green onions, finely chopped
Tabasco sauce, to taste  
6 hot dog buns  
6 Boston lettuce leaves
Softened butter, for spreading

Preparation

Lemon Mayonnaise

In a bowl, combine the egg yolks, lemon juice, and mustard. Add the oil in a thin stream while whisking vigorously. Season with salt and pepper. Refrigerate, if necessary.

Rolls

In a bowl, combine the crab meat, cucumber, green onions, 125 ml (1/2 cup) of the mayonnaise and the Tabasco sauce. Season with salt and pepper.
In a large skillet, brown the lightly buttered buns.
Spread mayonnaise inside the buns. Top with the lettuce and crab salad. Serve immediately.

You can replace the lemon mayonnaise with store-bought mayonnaise, adding lemon juice to taste.
