Chicken Caesar Wraps

Ingredients

    Caesar Mayonnaise

  • 1/2 cup (125 ml) mayonnaise
  • 1/2 cup (35 g) Parmesan cheese, freshly grated
  • 2 tbsp (30 ml) lemon juice
  • 2 tsp (10 ml) capers, drained and finely chopped
  • 1 tsp anchovy paste

    Wraps

  • 4 large tortillas, about 9 inches (23 cm) in diameter
  • 8 leaves romaine lettuce
  • 8 slices bacon, cooked until crisp 

  • 2 boneless, skinless chicken breasts, cooked and thinly sliced
  • 1 to 2 tomatoes, thinly sliced

Preparation

Caesar Mayonnaise

  1. In a bowl, whisk together all of the ingredients.

Wraps

  1. On a work surface, lay out the tortillas. Spread with the Caesar mayonnaise. Cover with the lettuce, bacon, chicken and tomato. Season with salt and pepper. Roll tightly and wrap individually in parchment paper, sealing the ends. Cut in half.
