3 to 4 large russet potatoes, peeled or unpeeled and cut into 1/2-inch (1-cm) thick sticks
1/4 cup (60 ml) olive oil

With the rack in the middle position, preheat the oven to 200 °C (400 °F). Line a baking sheet with parchment paper.
On the baking sheet, toss the potatoes with the oil. Bake for about 40 minutes or until golden brown. Turn the fries and bake for 5 to 10 minutes or until crisp. Drain on paper towels. Season with salt and pepper. Serve with Hortense-Style Mussels with Sausage.
