2 cups (500 ml) fresh cherries, halved and pitted, or blackberries
With the tip of a knife, remove the seeds from the vanilla bean.
In a small saucepan, bring the water, sugar, vanilla seeds and pod to a boil, stirring until the sugar has dissolved. Transfer to a bowl. Let cool and refrigerate for about 1 hour or until completely cooled. Remove the vanilla pod.
In a large bowl, toss the fruit with 45 ml (3 tablespoons) of the vanilla syrup. Refrigerate for 30 minutes before serving. Refrigerate or freeze the remaining syrup.
