Vanilla Berry Salad

Ingredients

    Vanilla Syrup

  • ½ vanilla bean
  • 1/4 cup (60 ml) water
  • 1/2 cup (125 ml) sugar

    Berry Salad

  • 2 cups (500 ml) strawberries, sliced or quartered
  • 2 cups (500 ml) fresh blueberries
  • 2 cups (500 ml) fresh cherries, halved and pitted, or blackberries

Preparation

Vanilla Syrup

  1. With the tip of a knife, remove the seeds from the vanilla bean.
  2. In a small saucepan, bring the water, sugar, vanilla seeds and pod to a boil, stirring until the sugar has dissolved. Transfer to a bowl. Let cool and refrigerate for about 1 hour or until completely cooled. Remove the vanilla pod.

Berry Salad

  1. In a large bowl, toss the fruit with 45 ml (3 tablespoons) of the vanilla syrup. Refrigerate for 30 minutes before serving. Refrigerate or freeze the remaining syrup.
