Scallops with Creamy Peas

  1. In a saucepan, soften onions in butter. Add peas, cream and pesto. Bring to a boil and simmer for about 2 minutes or until peas are warm. Season with salt and pepper.
  2. Meanwhile, in a non-stick skillet over high heat, sear scallops on one side in oil until golden brown. Turn over and cook until desired doneness. Season with salt and pepper.
  3. Spoon creamy peas on four plates. Top with scallops. Sprinkle with diced apple.
