Scallops with Creamy Peas

- In a saucepan, soften onions in butter. Add peas, cream and pesto. Bring to a boil and simmer for about 2 minutes or until peas are warm. Season with salt and pepper.
- Meanwhile, in a non-stick skillet over high heat, sear scallops on one side in oil until golden brown. Turn over and cook until desired doneness. Season with salt and pepper.
- Spoon creamy peas on four plates. Top with scallops. Sprinkle with diced apple.
