With the rack in the middle position, preheat the oven to 180 °C (350 °F). Line a baking sheet with parchment paper. Set aside.
In a bowl, combine all cheeses. Season with salt and pepper. Remove a bit of the baguette crust. Keep for another use. Spread cheese on two baguette halves. Place on the baking sheet.
Bake for about 15 minutes or until cheese has melted and bread is crisp and golden brown.
While bread is baking, in a skillet, brown bacon. Add onion and cook until soft. Off the heat, add parsley and mix thoroughly. Season with pepper. Spread over the warm cheese-stuffed baguette. Cut into 12 slices.
In a bowl, combine shrimp and green onion. Season with salt and pepper. Spread over the other cheese-stuffed baguette. Cut into 12 slices.
Serve warm as an hors d’oeuvre.
If you prefer only one flavour, double the amount of either topping.
