Cold Pork Roast Sandwiches
- 1/4 cup (60 ml) mayonnaise
- 1 tbsp (15 ml) whole-grain mustard
- 2 tbsp chopped fresh chives
- 8 slices crusty bread
- 12 thin slices cold pork roast (see recipe)
- 8 leaves Boston lettuce, or iceberg
- Salt and pepper
- In a bowl, combine the mayonnaise and mustard. Add the chives. Set aside.
- Toast the bread, if desired.
- Spread the mayonnaise mixture on the bread. Top with the pork slices and lettuce. Season with salt and pepper. Close the sandwiches.
