Cold Pork Roast Sandwiches

Ingredients

  • 1/4 cup (60 ml) mayonnaise
  • 1 tbsp (15 ml) whole-grain mustard
  • 2 tbsp chopped fresh chives
  • 8 slices crusty bread
  • 12 thin slices cold pork roast (see recipe)
  • 8 leaves Boston lettuce, or iceberg
  • Salt and pepper

Preparation

  1. In a bowl, combine the mayonnaise and mustard. Add the chives. Set aside.
  2. Toast the bread, if desired.
  3. Spread the mayonnaise mixture on the bread. Top with the pork slices and lettuce. Season with salt and pepper. Close the sandwiches.
