6 large red potatoes, unpeeled, scrubbed and cut lengthwise into quarters
45 ml (3 tbsp) canola oil
Salt and pepper
With the rack in the middle position, preheat the oven to 190 °C (375 °F).
On a baking sheet, toss the potatoes with the oil. Season with salt and pepper. Cover with aluminum foil and bake for 30 minutes. Remove the foil and cook, stirring occasionally, for about 45 minutes or until the potatoes are tender and roasted.
