- In a bowl, combine all the ingredients. Set aside.
- In a wok over high heat, heat the oil. Add the pork and stir-fry until no longer pink. Add the star anise, ginger, garlic and stir-fry 2 minutes more. Season with salt and pepper. Transfer to a plate.
- In the same wok, bring the sauce to a boil and reduce until syrupy. Add the vegetables and pineapple and cook until tender-crisp, 2 to 3 minutes. Return the pork to the wok and reheat while stirring. Adjust the seasoning. Remove and discard the star anise pods.
- Serve on jasmine rice.
