BBQ Chicken and Blue Cheese Sandwiches

  1. In a bowl, combine the chicken, mayonnaise and barbecue sauce. Season with salt and pepper. Set aside.
  2. With a vegetable peeler, make long ribbons with the carrot. Place in a bowl. Add the lemon juice and olive oil. Season with salt and pepper.
  3. Spread the chicken mixture over the bottom of each bun. Garnish with the carrot ribbons, lettuce and blue cheese. Close the sandwiches.
