Lemongrass Wonton Soup with Vegetable Spirals

  1. In a large pot over medium-high heat, brown the ginger, garlic and lemongrass in the oil for 2 minutes. Add the broth, soy sauce, fish sauce, brown sugar, star anise and peppercorns. Bring to a boil and simmer for 10 minutes. Strain the broth and return to the pot.
  2. Bring the broth to a boil. Add the vegetable spirals and wontons and simmer for 3 to 5 minutes or until tender.
  3. When ready to serve, garnish with cilantro.

  1. Delicious, easy and fast. I added some fresh lime juice, mainly because I couldn't find fresh lemon grass and had to use paste. A spiralizer would have made prep a little easier.

  2. Delicious broth. I was a bit skeptical of the star anise but it turned out beautifully. This soup is now on my weekday menu rotation. BTW, I did substitute the fresh wontons for the chicken/cilantro wontons I buy at Costco.
