Tomato Salad

Ingredients

  • 1 lb (450 g) cherry tomatoes, quartered
  • 1/4 cup (10 g) fresh soft herbs (such as basil, thyme, oregano, chopped chives)
  • 2 tbsp (30 ml) olive oil
  • 1 small garlic clove, finely chopped
  • 1 lemon, the finely grated zest only
  • Fleur de sel, to taste

Preparation

  1. In a bowl, combine all the ingredients. Season with salt and pepper.
  2. Serve as a side salad or on Focaccia with Fresh Herbs (see recipe).
