- 1 lb (450 g) cherry tomatoes, quartered
- 1/4 cup (10 g) fresh soft herbs (such as basil, thyme, oregano, chopped chives)
- 2 tbsp (30 ml) olive oil
- 1 small garlic clove, finely chopped
- 1 lemon, the finely grated zest only
- Fleur de sel, to taste
- In a bowl, combine all the ingredients. Season with salt and pepper.
- Serve as a side salad or on Focaccia with Fresh Herbs (see recipe).
