3 medium sweet potatoes, scrubbed clean and cut in half lengthwise
2 tbsp (30 ml) vegetable oil
1 onion, cut into 1/4-inch (5 mm) slices
Preheat the grill, setting the burners to medium-high. Oil the grate.
Place the potatoes in a bowl. Add the oil, season with salt and pepper and toss to coat. Place one-third of the onion slices between two halves of a sweet potato and tightly wrap in aluminum foil. Continue until all the potatoes are wrapped.
Grill for 45 minutes or until tender, turning occasionally.
