Tomato Salad with Grilled Halloumi Cheese and Bacon

Ingredients

  • 6 slices baguette, each ½ inch (1 cm) thick
  • 7 oz (200 g) halloumi cheese, cut into 8 slices
  • ¼ cup (60 ml) olive oil
  • 3 thick slices bacon, each ½ inch (1 cm) thick
  • 4 tomatoes, various colours, sliced
  • 3 tbsp basil leaves, torn
  • 3 tbsp parsley leaves, torn
  • ½ lemon, juice only

Preparation

  1. Preheat the grill, setting the burners to high. Oil the grate.
  2. Spread the baguette and cheese slices out on a large plate. Brush with 2 tbsp (30 ml) of the oil on both sides. Grill the baguette, cheese and bacon on both sides. On a work surface, cut the bread into large cubes and the bacon into large pieces.
  3. On a serving dish, arrange the tomatoes, bacon, cheese and bread. Sprinkle with the herbs. Drizzle with the lemon juice and remaining oil. Season with salt and pepper.
