Being Italian and eat artichokes once a week, and go to Italy all the time to visit family, I have always seen the artichokes being made a different way to your way. I do prepare the same way but I open the centre with my fingers and insert chopped garlic, chopped parsley, salt and pepper, a teaspoon of olive oil in each one, put in pot upright and add water half cover artichokes and boil for about 40 mins.
