As soon as the first autumn leaves begin to turn red or yellow, it’s time to run to the market or local producer to stock up on squash. A beacon of the fall season, squash can be transformed a thousand and one ways into comfort classics which will warm your kitchen on those first chilly nights. Here are some of our best recipes—both savoury and sweet—to inspire your meals.

1. Squash Quiche

This beautiful quiche celebrates all the autumnal colours. You can either make the crust yourself or use a commercial version for an ultra-quick meal. The egg, butternut squash and cottage cheese filling is fluffy, slightly sweet and ideal for brunch, lunch or dinner.

2. Braised Beef with Squash Pappardelle

Autumn officially begins when you eat a good braised dish. Here, beef blade is braised until it becomes tender and pulls apart with a fork. The meat is served mixed with pasta and a generous amount of diced squash—so comforting!

3. Squash, Carrot and Apple Layered Casserole
