When I consult French cookbooks, recipes often call for 0% percent white cheese. What it is? Can I find this ingredient in Quebec? If not, what can I use to replace it?

White cheese with 0% fat is a fresh cheese. It is sold in a plastic container like Ricotta cheese or Cottage cheese, which are two other kinds of fresh cheese. You can find a good product as Damablanc fresh cheese from Damafro in most of Quebec grocery stores. The white cheese should be cooked because its taste is bland and a slightly sour. I use it mainly to make low-fat cheesecake.
