Shaoxing rice wine is a popular cooking wine in Chinese cuisine. It has an alcohol content of about 4% and is used mostly to add flavour to dishes. It has a slight acidity but very different from that of vinegar. It is available in most Asian grocery stores.

The drumsticks can be replaced with other pieces of bone-in chicken, such as wings or carcass.

Freeze the wontons and broth separately. Once the wontons are frozen, transfer them to an airtight container. They will keep in the freezer for 3 months. You can cook them from frozen for roughly the same amount of time.
