Use any shrimp you happen to have on hand for this recipe. Regardless of the size of the shrimp, they will yield a similar result once puréed.
Do not use roasted sesame seeds as they will burn during cooking.
The shrimp toasts can be cooked in an air fryer. In this case, omit the oil. Using a pastry brush, cover one side of the bread slices with 1/4 cup (55 g) butter. Place the bread on a work surface, butter-side down. Spread the shrimp purée over the bread, using about 1/4 cup (60 ml) per slice. Working with one slice of bread at a time, press shrimp-side down into the sesame seeds. On the work surface, cut each slice of bread into 4 triangles. Place half of the triangles at a time, sesame-side up, in the basket of the air fryer. Cook for 10 minutes at 400°F (200°C).
