- 1/2 cup (125 ml) maple syrup
- 1 1/2 cups (375 ml) 35% whipping cream
Candied Pecans
- 1 cup (100 g) pecans
- 1/3 cup (75 ml) maple syrup
Peaches
- 6 ripe but firm peaches, halved and pitted
- 1/2 cup (125 ml) maple syrup
- 2 tbsp unsalted butter

Preparation

Maple Whipped Cream
- In a pot, bring the maple syrup to a boil. Continue cooking until the syrup starts to caramelize and reduces by half. Remove from the heat.
- Gradually add ½ cup (125 ml) of the 35% cream to the pot. Watch out for splattering. Bring to a boil and cook, stirring, until the caramel is smooth. Remove from the heat. Add the remaining cream and mix well. Pour into a bowl. Cover with plastic wrap directly on the surface of the cream. Let cool. Refrigerate for 6 hours or overnight.
Candied Pecans
- Meanwhile, in a small pot, bring the pecans and maple syrup to a boil. Stir constantly with a wooden spoon until the syrup becomes grainy and coats the nuts. Transfer to a plate and let cool. On a work surface, chop the nuts. Set aside.
Peaches
- In a large skillet over medium heat, cook the peaches, cut-side down, with the maple syrup and butter for 5 to 6 minutes or until starting to caramelize. Flip the peaches over and continue to cook until tender and the sauce is thick and syrupy. Add a bit of water as needed. Let cool.
- When ready to serve, whisk the chilled cream with an electric mixer until soft peaks form.
- Divide the peaches among six plates. Top with the whipped cream and candied pecans.
