You can make a great steak in a skillet or on the grill, but did you know that you can achieve a restaurant-quality piece of meat in your outdoor pizza oven? With just beef medallions, salt and pepper, a hot cast iron skillet and four minutes of cooking time, you’ll have a meal everyone around the table will enjoy.

Ingredients

- 4 top sirloin beef medallions, each about 1 ¼ inches (3 cm) thick (see note)
- 2 tbsp (30 ml) vegetable oil

Preparation

- Place the cast iron pan in the pizza oven. Preheat the pizza oven on high (MAX) with the door closed for 20 minutes.
- Meanwhile, on a large plate, coat the meat with the oil. Season generously with salt and pepper.
- Place the meat on the hot cast iron pan. Watch out for splattering. Bake with the door closed for 4 minutes, turning the steaks over halfway through, for rare or until the desired doneness is reached.
- Let the steaks rest on another plate for 5 minutes before serving. Serve with green salad or mashed potatoes, if desired.

Note from Ricardo

Feel free to use the cut of beef of your choice: tenderloin, striploin, flap steak, etc. Be sure to select a thick cut of beef (at least 1 inch/2.5 cm thick) for best results.
