Ingredients

- 1/3 cup (70 g) brown sugar
- 1/4 cup (35 g) cornstarch
- 1 tbsp cocoa powder
- 2 cups (500 ml) chocolate milk
- 2 tbsp butter, diced

Preparation

- In a small pot off the heat, whisk together the brown sugar, cornstarch and cocoa powder.
- Add ¼ cup (60 ml) of the chocolate milk to the pot and mix well. Add the remaining chocolate milk. Bring to a boil over medium heat, stirring constantly and scraping the bottom and sides of the pot, until the mixture thickens. Remove from the heat. Add the butter and stir until the mixture is smooth.
- Transfer the mixture to a bowl and let cool. Cover with plastic wrap directly on the surface of the pudding. Refrigerate for 6 hours or until the pudding is firm and completely chilled. The pudding will keep for 3 days in the refrigerator.
- When read to serve, mix the pudding with a spatula until creamy and smooth. Serve in small bowls.
