When caramelizing white chocolate, it tends to become grainy. Not to worry, this is perfectly normal. Keep stirring, pressing into the chocolate with the spatula, until it is no longer grainy.

The logs of cookie dough will keep in the freezer for 3 months. Remove them from the freezer and let sit out at room temperature for 15 minutes before cutting and baking.
