Raspberry-Peach Creamsicles

Ingredients

• Peaches and Raspberries

  • 1/2 cup (125 ml) water
  • 1/2 cup (105 g) sugar
  • 2 tbsp (30 ml) lemon juice
  • 3/4 cup (100 g) fresh raspberries
  • 1 1/2 cups (255 g) ripe peaches, peeled, pitted and chopped (see note)

• Cream

  • 1/2 cup (125 ml) 35% whipping cream
  • 1/4 cup (60 ml) sweetened condensed milk (see note)
  • 1/4 vanilla bean, split lengthwise and seeds scraped or 1 tsp (5 ml) vanilla
