Ingredients: 3 tbsp sugar; 1 lime; 12 mint leaves, plus 1 sprig for decorating; 2 1/2 oz (75 ml) lemon green tea iced tea, cold; 1 1/2 oz (45 ml) non-alcoholic dark rum; 1 oz (30 ml) lime juice; 1/2 cup (125 ml) crushed ice; 2 oz (60 ml) club soda, cold

Ingredients

- 3 tbsp sugar
- 1 lime
- 12 mint leaves, plus 1 sprig for decorating
- 2 1/2 oz (75 ml) lemon green tea iced tea, cold
- 1 1/2 oz (45 ml) non-alcoholic dark rum
- 1 oz (30 ml) lime juice
- 1/2 cup (125 ml) crushed ice
- 2 oz (60 ml) club soda, cold

Preparation

- Place 1 tbsp of the sugar on a small plate. Finely grate the zest of half of the lime over the sugar. Mix well. Cut the other half of the lime into 4 pieces. Rub the rim of a tall glass with a piece of lime. Coat the rim of the glass with the sugar mixture.
- Place the remaining sugar (2 tbsp), the mint leaves and lime pieces in the glass. Crush with a cocktail muddler. Add the iced tea, rum and lime juice. Stir. Add the ice and top off with the club soda. Decorate with a mint sprig.
