Ingredients: 1 1/2 lb (675 g) boneless, skinless chicken thighs; 1/2 cup (125 ml) VH honey garlic marinade; 2 tbsp (30 ml) VH light soy sauce; 2 tbsp (30 ml) vegetable oil; 6 green onions, thinly sliced, white and green parts separated; 1 can (14 oz/398 ml) white beans, rinsed and drained; 3/4 cup (180 ml) low-sodium chicken broth; 12 taco shells, soft or hard; 1 1/2 cups (150 g) mozzarella cheese, grated; 1 heart romaine lettuce, thinly sliced; 1 ripe avocado, diced; 1 lime, cut into wedges; Sour cream, to taste

Preparation

Honey-Garlic Chicken
- In a glass dish or freezer bag, combine the chicken, marinade and soy sauce. Let marinate for 30 minutes in the refrigerator. Drain the chicken and discard the marinade.
- In a large skillet over medium-high heat, brown the chicken in the oil for 5 minutes on each side or until cooked through. Season with salt and pepper. Place the chicken on a work surface and let sit for 5 minutes. Thinly slice the chicken. Keep warm.
- Meanwhile, in the same skillet, brown the white parts of the green onions in the chicken cooking fat. Add the white beans and broth. Bring to a boil. Using a potato masher, lightly crush the white beans. Simmer for 5 minutes or until the broth thickens. Season with salt and pepper.
For Serving
- Place the chicken and white beans at the centre of the table along with the taco shells, cheese, lettuce, avocado, lime, sour cream and green parts of the green onions. Let everyone around the table fill their own tacos.
