Ingredients: 1 1/2 (675 g) boneless, skinless chicken breasts; 2 tbsp (30 ml) vegetable oil; 1 cup (250 ml) VH sweet and sour marinade; 1 red onion, cut into 8 wedges; 2 tbsp (30 ml) vegetable oil; 1 red bell pepper, seeded and cut into strips; 1 broccoli crown, cut into small florets; 2 cups (290 g) fresh pineapple, diced; 4 cups (600 g) Calrose rice (sushi rice) or long-grain rice, cooked; 1/4 cup (35 g) roasted cashews

Preparation

Chicken
- In a large skillet over medium-high heat, brown the chicken in the oil. Add the marinade and bring to a boil. Cover and simmer for 10 minutes or until the chicken is cooked through and the sauce is thick and syrupy, stirring a few times. Add water, as needed, if the sauce reduces too quickly.
Stir-Fry
- Meanwhile, in a wok over high heat, brown the onion in the oil. Add the bell pepper, broccoli and pineapple. Continue to cook for 3 minutes, stirring, or until the broccoli is cooked. Season with salt and pepper. Remove from the heat.
- On a work surface, thinly slice the chicken. Divide the rice among four bowls. Top with the vegetable stir-fry, sliced chicken and cashews. Serve immediately.
