Cucumber and Tomato Salad with Spicy Honey Dressing

Ingredients

• Dressing

  • 1 lemon, zest finely grated
  • 2 tbsp (30 ml) lemon juice
  • 2 tbsp (30 ml) olive oil
  • 2 tbsp (30 ml) honey
  • 1 tsp thyme leaves, plus more for serving
  • 1/2 tsp (2.5 ml) harissa, or more to taste

• Salad

  • 2 cups (280 g) cherry tomatoes, halved
  • 1/2 cup (65 g) mixed roasted unsalted nuts (such as almonds, cashews, walnuts, pistachios) (see note)
  • 12 radishes, quartered
  • 5 Lebanese cucumbers, sliced into rounds
  • 1 red bell pepper, seeded and cubed
  • 1/2 red onion, halved and thinly sliced
