  1. Brush the inside of the rolls or the bread slices with olive oil.
  2. Arrange the cheese and tomatoes on half the bread slices or on 1 side of the open rolls. Season with salt and pepper. Add the basil. Close the sandwiches.
  3. In a lightly oiled grill pan over medium heat, heat the sandwiches 3 to 4 minutes a side, pressing with a spatula. Alternatively, heat the sandwiches in a panini.
