In a bowl, combine all the ingredients. Set aside.
Preheat a gas grill, setting the burners to high, or preheat a grill pan.
In a large bowl, combine the oil and paprika. Add the chops and coat well. Season with salt and pepper.
Grill the chops until done to your liking, about 3 minutes a side.
Transfer to serving plates and sprinkle with the gremolata. Serve with Grilled Porcini and Sun-Dried Tomato Polenta (see recipe). For an even more colourful plate, garnish with strips of grilled orange bell pepper.
