Preparation

  1. In a salad bowl, combine the apple, bean sprouts, pistachios and parsley. Set aside.

Vinaigrette

  1. In a bowl, whisk together all the ingredients. Adjust the seasoning.
  2. Form a bed of lettuce in two plates. Add the salad and sprinkle with cheddar. Serve immediately.
