Slow Cooker Vegetable and Lima Bean Soup

  1. In a skillet, brown the onion and bacon in the oil. Add the garlic and cook for 1 minute. Pour into the slow cooker. Add the remaining ingredients and blend well. Season with salt and pepper. Cover and cook on high for about 6 hours or until the beans are tender. Remove the sprigs of herb and adjust the seasoning.


Pay special attention to the lima beans at the end of cooking. Once they are tender, stop the cooking, because they quickly transform into purée. If you are not going to be able to check, set the slow cooker for 4 hours of cooking. It will then be possible to cook it further when your return, if necessary.
