    • 2 1/4 cups (560 ml) quick cooking rolled oats
    • 2/3 cup (150 ml) unbleached all-purpose flour
    • 1/2 teaspoon (2.5 ml) ground cinnamon (optional)
    • 1 pinch of salt
    • 3/4 cup (180 ml) unsalted butter, softened
    • 1 cup (250 ml) brown sugar
    • 1 teaspoon (5 ml) vanilla extract
    • 1 egg

Step 5
Bake one sheet at a time, unless you use a convection oven. For soft cookies, do not overbake them. Right out of the oven, the center of the cookies should still be very soft.
