Chewy Oatmeal Cookies

  1. With the rack in the middle position, preheat the oven to 180 °C (350 °F). Line two baking sheets with parchment paper.
  2. In a bowl, combine the oats, flour, cinnamon, and salt. Set aside.
  3. In another bowl, cream the butter, brown sugar and vanilla with an electric mixer. Add the egg and beat until smooth. With a wooden spoon, stir in the dry ingredients.
  4. With a spoon, drop 45 ml (3 tablespoons) of dough per cookie onto the baking sheets, leaving 5-cm (2-inch) between each. With a floured glass bottom, lightly flatten the cookies.
  5. Bake for about 14 minutes, until cookies have a golden brown underside. Cool on the sheet then transfer to a cooling rack. Bake the remaining dough the same way.

Bake one sheet at a time, unless you use a convection oven. For soft cookies, do not overbake them. Right out of the oven, the center of the cookies should still be very soft.

  1. Forgot to mention since I added coconut/dried cranberries I added maple syrup as a binder

  3. At first I thought it called for too much butter, so held back a bit. It turned out a wee bit crumbly. I added dried cherries and a few nuts. It tastes rich and satisfying.

  5. Simple, really good chewy cookies. I topped them with a few roasted salted pumpkin seeds and small bits of dried tart cherries.

  6. Added triple cinnamon amount with 1/2 cup of chocolate chips. Delicious!

  8. Have been searching for a really oatmeal raisin cookie for ages. my husband loves them. I added a cup of raisins and made the cookies a little smaller - about 2 tablespoons. Baked for about 12 minutes. I have stored them with a piece of bread (another Ricardo tip) to keep them moist.

  9. This is my family's new favourite oatmeal cookie recipe.

  10. Doubled the cinnamon and added raisins. Heavenly! Thank you!!!
