You can use this filling for tuna sandwiches or stuffed tomatoes and serve cold as an appetizer: cut off the tomatoes cap and a thin slice at the bottom so that they are stable when placed on a plate. Core and stuff with the tuna mixture.
To use the flesh of the tomatoes, purée in the blender until smooth, then strain. Season with salt and pepper. Add a little sugar to mellow the acidity, as needed. Add Tabasco sauce and serve cold in shot glasses or as a cold soup in small bowls.
