  1. In a saucepan, brown onions in butter. Season with salt and pepper. Add remaining ingredients, except for sea buckthorn berries. Bring to a boil and simmer for 20 minutes. Add berries and cook for 5 minutes or until fruit is cooked and liquid is syrupy. Adjust seasoning.

Note

If you cannot find sea buckthorn berries, replace them with blueberries.

  1. This is a delicious chutney with a very original taste, due to the sea buckthorn. I found the quantity of cider vinegar to be too large so I reduced it to half and it was perfect! This chutney best complements pulled bison, but I also serve it alongside pulled beef and roast beef.
